The Gran Riserva Pecorino cheese is one of the most ancient traditional rural Tuscan food. In the past, its big aged blocks were made thanks to the Spring abundance of milk and were used as a farmer family’s food stock for the following Winter. Still nowadays, the Gran Riserva Pecorino cheese is made in March, April, and May, when milk is rich in flavour and aroma. Its crust is thick and yellowish, its texture is solid but soft on the inside, its complex and intense aroma gives you an idea about its strong and persistent flavour. It is perfect with fresh fruit such as figs, pears, and grape, or with dried fruit such as nuts and almonds. It perfectly matches strong wines like Brunello di Montalcino and Nobile di Montepulciano.
